You wonder about the gastronomy in Pau? Well, there are a jam-making

the specialities of the South-West - the confits, duck and goose
breasts, the foie gras - and the Béarn specialities: milk-fed
lamb, cheeses made from ewe's milk, pigeon, trout and salmon, Madiran,
the Jurançon wine and rosé wines from the Béarn.
All these and other treasures can be found at the picturesque Saturday
morning market in the Place de la République. If you're looking

Pau has all it takes to satisfy your needs. There are over a thousand
shops and boutiques in the town centre, not to mention the antique
dealers, the weekly Foirail bric-a-brac market and a dozen or so
